Caerphilly Cheese & Welsh Pakoras
Using local Caerphilly Cheese makes these tasty pakoras.
Makes approximately 12 pakoras.
100g potatoes, cut into small even size cubes
110g Caerphilly Cheese, cut into small cubes
1 leek finely sliced
1 teaspoon of cumin seeds
1/2 teaspoon chilli powder
1 - 2 fresh green chilli, minced
Salt to taste
Cold water to bind mix
Oil for deep frying
Mix 150g flour with potato cubes, leek and Caerphilly Cheese, fresh chilli, cumin seeds, chilli powder and salt.
Add enough water to bind, you want to achieve a free form dropping consistency.
Heat the oil in a large pan or deep fat fryer, drop a few tablespoons of the batter mix gently into hot oil, cook on one side for a couple of minutes until crisp then turn over and do the same.
Eat while fresh and crispy, enjoy!
